Spain's Mantecados: An easy homemade recipe for a cookie that will crumble in your mouth.

This week's Around the World Dessert comes all the way from Spain. Mantecados are one of Spain's most famous desserts. Mantecados are also very well known for being called crumble cakes, reason being is because when you take a bite of one of these delicious cookies it melts and crumbles in your mouth. Though Spaniards make these cookies specially for christmas time, they are easy to make and enjoy at any time.

  • 2 1/4 cups vegetable shortening
  • 1 cup vegetable oil
  • 1 2/3 cup granulated sugar
  • 4 egg yolks
  • 2 shot glasses of anise (see note below for substitute)
  • 1 lemon peel, grated
  • juice from 1 lemon
  • 1/2 tsp cinnamon
  • 7 1/4 cups unbleached white flour
  • 1/2 tsp baking soda
  • 1 egg white, beaten for glaze
